Explanation
さすが, which can also be written with kanji as 流石, is an adverb used to express admiration when someone or something lives up to their reputation or the expectations held for them. This nuance is similar to English expressions like 'that's (A) for you', or 'it's no surprise that...'.
Being an adverb, 流石 can be placed at the start of a clause (sometimes with に), or it can modify a noun directly by using の.
- おいしい！さすがお母さん！This is delicious! Just what I'd expect from you, Mom!
- 流石に冬は寒いですね…It's no surprise it's cold in the winter...
- さすがの先生でもそれは知らないかもしれない。Even a teacher might not know that.
Caution
On occasion, さすが can carry a sarcastic or negative meaning. In such situations, it expresses a sense of 'just as I predicted' regarding a negative outcome or flaw, akin to saying 'that's so typical of you' in a critical way.
- さすが山田さん！また遅刻ですね！Of course, Yamada-san! Late again!
Fun-fact
The kanji combination for 流石 is an instance of what's called 借字 in Japanese. This literally means 'borrowed characters', and signifies that the kanji were chosen for their sound, not for their meaning, which has no connection to the word's definition.
